Feeling very much in The Matrix today... I shower when I can’t stand one more moment of laying in bed. I think about how I can help others because I feel so helpless everyday. Here is another charity that I am highlighting and donating to. I woke up this morning thinking about these nurses and doctors that are on the front lines. They are putting themselves at risk to help others, and then they come home and risk infecting their children because they haven’t had the supplies they need. Can you imagine how scary that must be? First Responders opened 3 daycare centers this week to help take care of the kids while the nurses are in the hospitals taking care of patients during this crisis. First Responders was formed to help frontline healthcare workers step forward to address this epic public health challenge, their own health is threatened because of shortages in personal protective equipment including gowns, gloves, and masks. #FirstRespondersFirst, in partnership with the Entertainment Industry Foundation, is launching a fundraising call to action to help address these needs. An hour. That’s about how long a cake lasts in my house! I love classic baking, but I also lean into grain free and protein packed. I randomly had Cassava flour because Hayes brought it home the 1st week of Quarantine because it was the only flour left on the shelf! I remembered this recipe because I think @pamelasalzman is the Queen of GF refined sugar free cooking. Anyway, you can sub Tapioca and Arrowroot for the Cassava. Or AP flour may work? I added more spices and then butter and powdered sugar to the frosting! I mean, frosting can only be so healthy. LA Students Most In NEED has raised over 1.6 million dollars since it was formed 2 weeks ago to help get meals and devices to LAUSD kids that are out of school. Not only that, they are also helping their parents and extended families during this crisis. So I raise a glass to ALL that have found ways to help others during this difficult time. 1 lb. pasta 5 cups grated cheddar cheese 4 Tbls. Butter 4 Tbls. Flour 4 cups milk or mix of milk and half and half. While boiling pasta, melt butter and then add flour. Cook for 60 seconds until bubbling and then slowly add 2 cups milk and 2 cups half and half. It should thicken and start to bubble! Then add the salt and cheese. Stir until melted and creamy and then add the pasta! Delish. You can serve from the stovetop or pour into a dish and top with panko and bake for a crunchy crust! Sun’s out! I needed to turn off my phone today and get my hands in the earth. We are building a vegetable garden and getting the kids in on the work! Any tips for growing veggies? I want Heirloom tomatoes, cucumbers, zucchini, celery, red peppers, herbs, and strawberries. Kids want corn and watermelons! Is that even possible with this size? It’s 12x4. I’d also love those little Italian strawberries! Or Gaviota variety? What’s everyone up to during Quarantine today? I dug out this book that @ericahansonb gave me years ago. I had ordered the box from @homedepot and @armstronggarden is doing delivery and curbside pick-up!

I was able to physically volunteer this morning at a food resource center set up at San Fernando High School. The cars were lined up with families... 5 blocks deep. We wore masks, gloves, and practiced social distancing. My heart was filled by these kids. Their excitement over their snack packs, the parent’s thankfulness for this service. It runs Monday through Friday from 7-10am or until they run out at 60 schools throughout Los Angeles. The volunteers were positive and steady. The hope is to continue to get the word out so that all families are aware of this service. I signed up as an @americanredcross volunteer. My emotions are running high during this time of uncertainty and fear, but it is in community where I find my solace. Thank you @austinlaschools #LAstudentsmostinneed @dpmarinoff @jklivinfoundation for your tireless work to help these kids. 🙏

Feeling like you want to bring a smile to a kid’s face? I knew that a lot of LAUSD kids got their meals at school, but I didn’t know to what extent. With the closures, they are being left hungry and alone. LA Students most in Need Fund just opened 60 food resource centers that are serving kids 2 meals a day. I am going to visit one tomorrow to get the word out. Here is a link below to help our kids. If you have the resources, please donate. We are all in this together. 💕 Some general facts: Los Angeles unified serves approximately 700,000 students, 80% of whom are living in poverty. On an ordinary day during school we serve more than 1 million meals The LA Students Most in Need Fund was created to provide much-needed assistance to students and families. The funds will be used to provide meals and urgently needed supplies for students and family members. This is what I will be cooking up tomorrow! My Heart-shaped French toast with Nutella and bananas. It’s easy, delicious, and everyone LOVES the Nutella surprise in the middle. Enjoy sweethearts! FRENCH TOAST WITH NUTELLA AND BANANAS Ingredients: 8 slices Whole Wheat Toast 4 Tbls. Nutella 2 Bananas 2 Eggs ¼ cup Vanilla Almond Milk 4 Tsp. Earth Balance butter Strawberries and Powdered Sugar, for garnish Heart-Shaped Cookie Cutter Directions: Cut a heart out of 8 pieces of bread, then spoon and spread Nutella onto 4 pieces. Cut bananas into slices, distribute the slices evenly on top of the Nutella covered bread, then top with the plain bread to make 4 sandwiches. Beat together the eggs with the almond milk in a medium sized bowl, then individually dunk the hearts in the mixture, flipping so both sides are saturated. Melt 1 tsp. of Earth Balance butter in a pan on medium heat, then cook the hearts one by one until golden brown, re-greasing pan as needed. Plate, garnish with strawberries, dust with powdered sugar, and love every bite! Anybody else all about health in 2020? Here’s one of my simple go-to soups that is fresh, tangy, and packed with vitamin C. Enjoy. 🥕 🍊 🥣 Carrot Ginger Soup Ingredients: 2 tbs coconut oil ½ cup chopped white onion 4 cups chopped carrots 4 cups vegetable broth 1 cup orange juice 1 tbs + 2 tsp finely grated fresh peeled ginger 1 tbs lemon juice 14 ounce can coconut milk Salt and reshly ground black pepper, to taste Directions Heat olive oil in a large saucepan over medium-high heat. Add the onion and saute until translucent, about 5 minutes. Add the carrots, broth, orange juice, ginger and lemon juice; bring to a boil. Reduce the heat and continue to simmer, covered, until the carrots are tender, about 20 minutes. Remove from heat. Puree with immersion blender or food processor until very smooth. Return the soup to the saucepan and stir in the coconut milk. Salt and pepper to taste. Reheat until medium hot. Ladle into bowls and serve.

Skiing with kids is not for the faint of heart. This pic was taken hours after our kids melted down. Tears froze in the icy wind. Bribery happened with gummy bears at 9:30am. I looked at a mom and she said,” you do you.” 😤 The ski instructors blamed me for being tardy even though the gondola was shut down. First of all, I am never late. 2nd, please never again say the word tardy. The winds whipped to 10 below. BUT, we got in 4 great runs before all the lifts were closed. Luckily, we were stuck with Debbie from Philly who gave me a cold Scrimshaw and a bowl of smoked Tritip Chili. All woes were forgotten and I’m ready for the next adventure with my loves.

What’s your favorite Christmas cookie to make over the holidays? Here is my Candy Cane Crunch Cookie recipe that I make every year! Ingredients: 2 1/2 cups all-purpose flour 1 tsp. sea salt 3/4 tsp. baking soda 16 tbsp. (2 sticks) unsalted butter, softened 1 cup packed golden brown sugar 1/2 cup sugar 2 tsp. vanilla extract or vanilla paste 2 large eggs 12 oz. good-quality white chocolate (preferably Lindt because it melts well), coarsely chopped, divided 1/2 cup coarsely crushed candy canes or peppermint candies Makes about 3 dozen cookies Instructions: Position rack in center of oven and preheat to 350°F. Line 2 rimmed baking sheets with silicone mats or parchment. Whisk flour, salt, and baking soda in a medium bowl. Beat butter, both sugars, and vanilla in a large bowl, using an electric mixer. Add eggs and beat until well blended. Add flour mixture and beat until just incorporated. Set aside 2 oz. of white chocolate for melting and drizzling over finished cookies. Add remaining 10 oz. chopped white chocolate to cookie batter. Form batter into golf-ball-size rounds and place on prepared baking sheets, spacing 1 to 2 inches apart. Bake until set and beginning to crack on top (8 to 10 minutes). Transfer to a rack and cool completely. Melt reserved 2 oz. white chocolate in a small metal bowl perched over a small saucepan of simmering water. Stir with a spatula until smooth (try not to overheat or it will seize and will no longer be pourable). Drizzle melted white chocolate lightly over top of cookies (finish 2 or 3 at a time) and immediately press some of crushed candy canes atop each one. Repeat until all cookies are done (it may be necessary to keep bowl with melted chocolate over hot-water bath to keep chocolate melted). Cool cookies completely. Enjoy! 📸 @amyneunsinger __

    This is what I will be cooking up tomorrow! My Heart-shaped French toast with Nutella and bananas. It’s easy, delicious, and everyone LOVES the Nutella surprise in the middle. Enjoy sweethearts! FRENCH TOAST WITH NUTELLA AND BANANAS Ingredients: 8 slices Whole Wheat Toast 4 Tbls. Nutella 2 Bananas 2 Eggs ¼ cup Vanilla Almond Milk 4 Tsp. Earth Balance butter Strawberries and Powdered Sugar, for garnish Heart-Shaped Cookie Cutter Directions: Cut a heart out of 8 pieces of bread, then spoon and spread Nutella onto 4 pieces. Cut bananas into slices, distribute the slices evenly on top of the Nutella covered bread, then top with the plain bread to make 4 sandwiches. Beat together the eggs with the almond milk in a medium sized bowl, then individually dunk the hearts in the mixture, flipping so both sides are saturated. Melt 1 tsp. of Earth Balance butter in a pan on medium heat, then cook the hearts one by one until golden brown, re-greasing pan as needed. Plate, garnish with strawberries, dust with powdered sugar, and love every bite!     Anybody else all about health in 2020? Here’s one of my simple go-to soups that is fresh, tangy, and packed with vitamin C. Enjoy. 🥕 🍊 🥣 Carrot Ginger Soup Ingredients: 2 tbs coconut oil ½ cup chopped white onion 4 cups chopped carrots 4 cups vegetable broth 1 cup orange juice 1 tbs + 2 tsp finely grated fresh peeled ginger 1 tbs lemon juice 14 ounce can coconut milk Salt and reshly ground black pepper, to taste Directions Heat olive oil in a large saucepan over medium-high heat. Add the onion and saute until translucent, about 5 minutes. Add the carrots, broth, orange juice, ginger and lemon juice; bring to a boil. Reduce the heat and continue to simmer, covered, until the carrots are tender, about 20 minutes. Remove from heat. Puree with immersion blender or food processor until very smooth. Return the soup to the saucepan and stir in the coconut milk. Salt and pepper to taste. Reheat until medium hot. Ladle into bowls and serve.

    Skiing with kids is not for the faint of heart. This pic was taken hours after our kids melted down. Tears froze in the icy wind. Bribery happened with gummy bears at 9:30am. I looked at a mom and she said,” you do you.” 😤 The ski instructors blamed me for being tardy even though the gondola was shut down. First of all, I am never late. 2nd, please never again say the word tardy. The winds whipped to 10 below. BUT, we got in 4 great runs before all the lifts were closed. Luckily, we were stuck with Debbie from Philly who gave me a cold Scrimshaw and a bowl of smoked Tritip Chili. All woes were forgotten and I’m ready for the next adventure with my loves.

    What’s your favorite Christmas cookie to make over the holidays? Here is my Candy Cane Crunch Cookie recipe that I make every year! Ingredients: 2 1/2 cups all-purpose flour 1 tsp. sea salt 3/4 tsp. baking soda 16 tbsp. (2 sticks) unsalted butter, softened 1 cup packed golden brown sugar 1/2 cup sugar 2 tsp. vanilla extract or vanilla paste 2 large eggs 12 oz. good-quality white chocolate (preferably Lindt because it melts well), coarsely chopped, divided 1/2 cup coarsely crushed candy canes or peppermint candies Makes about 3 dozen cookies Instructions: Position rack in center of oven and preheat to 350°F. Line 2 rimmed baking sheets with silicone mats or parchment. Whisk flour, salt, and baking soda in a medium bowl. Beat butter, both sugars, and vanilla in a large bowl, using an electric mixer. Add eggs and beat until well blended. Add flour mixture and beat until just incorporated. Set aside 2 oz. of white chocolate for melting and drizzling over finished cookies. Add remaining 10 oz. chopped white chocolate to cookie batter. Form batter into golf-ball-size rounds and place on prepared baking sheets, spacing 1 to 2 inches apart. Bake until set and beginning to crack on top (8 to 10 minutes). Transfer to a rack and cool completely. Melt reserved 2 oz. white chocolate in a small metal bowl perched over a small saucepan of simmering water. Stir with a spatula until smooth (try not to overheat or it will seize and will no longer be pourable). Drizzle melted white chocolate lightly over top of cookies (finish 2 or 3 at a time) and immediately press some of crushed candy canes atop each one. Repeat until all cookies are done (it may be necessary to keep bowl with melted chocolate over hot-water bath to keep chocolate melted). Cool cookies completely. Enjoy! 📸 @amyneunsinger __
